History of Toyoko Ramen Niigata.
Niigata is a mountainous region which known as one of the areas in Japan with the heaviest amount of snow, and has produced a lot of foods which warm the body in order to enable its residents to endure the long and cold winters. Toyoko's Ramen with thick noodles and a rich miso soup is said to be one of these foods, and is still popular with the people of Niigata Prefecture. Toyoko's Ramen of Niigata is famous when Yasunari Kawabata won the Nobel Prize for literature in 1968 which started one of his novels with the famous line, "The train came out of the long tunnel into the snow country." And then the novel was titled "Snow Country" and was set in Niigata.
